Diner Pancakes

Ingredients:

4 Eggs
1/4 C. Sugar
4 C. Flour
2 TBSP Baking powder
3 C. Milk
2 tsp Salt
1/2 C. Butter
1 C. Malt

Instructions:
Beat the eggs in a stand mixer until they are super fl and thick. Sprinkle in the sugar with the mixer still running. When it’s combined, turn off the mixer.

Combine the four, baking powder, salt, and malt into a….drumroll please…SIFTER! Yay! Crank that bad boy straight into the mixer bowl. Melt the butter, combine with the milk, and turn the mixer back on to low. Slowly add the milk mixture into the bowl. Just mix until everything is barely combined.

Let the mixture sit for about 5 minutes. Scoop the batter into a 1/4 cup measuring cup and place strategically on a hot, greased or buttered, griddle.

When the pancakes look bubbly in the middle and dry around the edges it’s time to flip them! Cook the other side for 1-2 minutes.
