Madeleines

Cakey sort of cookie or cookie sort of cake! Super easy and yuuuuummy!

Ingredients:

½ C. unsalted Butter, melted

2 Eggs – room temperature

½ C. Sugar

1 tsp Vanilla

1 C. Flour

½ tsp Baking Powder

¼ tsp Salt

Instructions:

Preheat the oven to 350.

In a stand mixer, beat the eggs and sugar until thick, high speed for about 7 minutes. Stir in butter and vanilla. 

Whisk the flour, baking powder and salt in a bowl and then fold into the egg mixture. Just BARELY mix it. 

The batter should be thick and shiny.

Like Rapunzel’s hair, except, not really like that.

Cover the batter and chill for 30 minutes. 

It’s always good to chill. 

Now, there are such things as Madeleines Pans. While they are SUPER cool, if you don’t have one, no worries. You can totally use a mini muffin pan. If you don’t have one of those, you can scoop spoonfuls onto a cookie sheet and if you don’t have one of THOSE well, may Mr. Bojangles have mercy on your soul. 

Bake for 10-15 minutes until golden brown. Dust with powdered sugar before serving.

  • Cover the batter and chill for 30 minutes. Then scoop into madeleine pan or mini muffin pan.
  • Bake for 10-15 minutes until golden brown. Dust with powdered sugar before serving.
