Ingredients:
1/2 C. Butter, softened
1 C. Sugar
2 large Eggs
1 C. mashed Bananas
1/4 C. Buttermilk
1/2 tsp Vanilla
1 3/4 C. all-purpose Flour
1 tsp Baking Powder
1/4 tsp Salt
Instructions:
Preheat the oven to 350F. Grease a loaf pan and set aside. You really don’t want to skip this step, unless you have a passion for chiseling bread out of tin.
Cream butter and sugar together in a stand mixer. You can do it with a hand mixer, but I wouldn’t suggest it unless you are only making one loaf of bread. And who would do that?
Banana pants!
Add eggs, one at a time, mashed bananas, buttermilk, and vanilla until all ingredients are best friends that always come to each other’s birthday parties. Or until they are combined, whichever comes first. Turn off the mixer for a sec and add in the flour, baking powder, salt, and soda. Turn it back on, low, and mix until just combined.
Pour batter into prepared pan and bake for 45-55 minutes or until a toothpick comes out clean. Be sure to check it with a toothpick at the low time mark, you don’t want overcooked banana bread.
Overcooked banana bread = brick.
Let cool in the pan on a wire rack for 15 minutes. Loosen the bread with a knife, butter or plastic, so it doesn’t scratch the pan, and turn upside down to remove from pan. You might have to shake it a little, depending on whether you listened to that note about greasing.
If you do have to shake it, turn on some music and invite all your friends over.
This bread slices best when it is completely cool so let it sit on the cooling rack until that moment comes. You can stare at it with a knife in one hand and butter in the other, but I can’t guarantee that will make it cool faster.
